Story
Tenor™ is a fine single region cocoa variety produced in an area surrounded by mountains and covered by cloud forest. Until today coffee remains one of the region’s main sources of income. However, due to the impact of climate change, producers in La Dalia have seen cocoa as an option to diversify and ensure their income.
This cocoa is grown and harvested by producer families. All producers are part of the Adapta Project. This project, initiated by Ingemann and supported by the Inter-American Development Bank, Christian Aid and Centro Humboldt, boosts climate resilient farming practices in the fine cocoa and honey sectors.

Post Harvesting Process
The wet mass is collected from the farmers by Ingemann and taken to their own post-harvesting facilities. Fermentation takes place in wooden boxes and is done according to strict protocols especially designed to express the best flavour potential of the beans.
